Operated by seasoned hospitality veteran Les Rice, The Thistle is thoughtfully envisioned as a warm, community-focused nosh spot where guests are encouraged to slow down and truly savour the simple beauty of everyday moments. “I wanted to create a space that feels like a peaceful pause, somewhere people feel genuinely taken care of from the moment they walk in,” says Les in an insightful statement. “It’s not loud or flashy. It’s intentional, warm, inviting, and deeply human.” The much-needed facelift has resulted in a refreshed and inviting aesthetic that seamlessly blends timeless classic charm with contemporary modern elements – imagine soothing olive-green tones, elegant vintage light fixtures, green glass wine vases brimming with lush floral arrangements, and soft, natural timber textures throughout.
